Rosy Rock Cookies
Description
Ever had a cookie where the main ingredient was tomato soup? Yea...me neither, till now. These cookies have such a unique flavor and texture which grows on you as you eat them. It's like a cake that has a hint of a sweet tomato but with a spicy after taste. Hard to describe really. :-) Makes about 84 cookies.
Ingredients
Directions
-
Preheat your oven to 350˚F (175˚C).
-
In your main mixing bowl, add margarine, egg, tomato soup and mix.
-
Sift in flour, sugar, baking powder, baking soda, cinnamon, all spice and mix at medium speed for 2 minutes until it becomes light and fluffy. Periodically scrape the sides of the bowl with your spatula to make sure everything is evenly mixed.
-
Add in quick oats, raisins, chopped walnuts and mix with a spatula by hand with a spatula.
-
Line a baking tray with parchment paper. Scoop 2 tablespoons of cookie dough (about the size of a walnut) and place the dough balls about 2 inches apart on the prepared tray. The cookie dough is super sticky so do the best you can.
-
Bake for 13-15 minutes.
-
Let cookies cool completely before consuming. Enjoy!
