Description

Ever had a cookie where the main ingredient was tomato soup? Yea...me neither, till now. These cookies have such a unique flavor and texture which grows on you as you eat them. It's like a cake that has a hint of a sweet tomato but with a spicy after taste. Hard to describe really. :-) Makes about 84 cookies.

  1. Preheat your oven to 350˚F (175˚C).

  2. In your main mixing bowl, add margarine, egg, tomato soup and mix. 

  3. Sift in flour, sugar, baking powder, baking soda, cinnamon, all spice and mix at medium speed for 2 minutes until it becomes light and fluffy. Periodically scrape the sides of the bowl with your spatula to make sure everything is evenly mixed.

  4. Add in quick oats, raisins, chopped walnuts and mix with a spatula by hand with a spatula.

  5. Line a baking tray with parchment paper. Scoop 2 tablespoons of cookie dough (about the size of a walnut) and place the dough balls about 2 inches apart on the prepared tray. The cookie dough is super sticky so do the best you can.

  6. Bake for 13-15 minutes.

  7. Let cookies cool completely before consuming. Enjoy!
