Orange Oatmeal Cookies
Description
A deliciously light, orange flavored cookie with hints of nutmeg and a chewy oaty center. Recipes makes about 24 cookies.

Step 1
For this step you'll need:
Preheat your oven to 375˚F (190˚C). In a large bowl, add your flour, salt, baking powder and nutmeg and mix them together. Set aside for now.

For this step you'll need:
Always wash any fruit before you start cooking with them. Since we will be grating the orange rinds into the cookie dough, the outside of the orange needs to be thoroughly rinsed. (FYI, I have 3 oranges in this picture but I only used one of them to get 1/8 cup of the orange rind. I was munching on the other 2 while making this recipe. lol)

Step 3
For this step you'll need:
In a separate bowl, grate your orange rind off. One large orange should be enough for this. Grate the entire top layer of orange off. Stop when you hit the white underneath. Then, cut your orange in half and squeeze out the juice into a separate bowl. Remove any seeds that might pop out. If you want, you can dry out the seeds and attempt to plant them to grow your very own orange tree! If not, simply toss them into the composter.

Step 4
For this step you'll need:
In your main mixing bowl, add your sugar and shortening together and mix. Having a mixer is optional for this recipe as this cookie dough can be mixed by hand with a spatula.

For this step you'll need:
- 1 Egg
- 1/8 cup (2og) Grated Orange Rind
- 1 Tbsp Fresh Orange Juice
Add your egg, grated orange rind and 1 tablespoon of your orange juice in and continue mixing.

For this step you'll need:
- Premixed Dry Ingredients From Step 1
Add your 4 premixed dry ingredients (flour, baking powder, salt, nutmeg) into the mix 1/2 cup at a time and mix in between. If you add all the dry mix all at once, you will get blasted with flour to the face! :-)

Step 7
For this step you'll need:
Add your oats and mix. The dough will be very thick at this point. (This is where you would add in your optional chocolate chips if you wanted to. When I made this recipe the second time, I found 1/2 cup worked great for me.)

Step 8
For this step you'll need:
- Cookie Sheet
- 1 Sheet Of Parchment Paper
- Your Hands :-)
Lay a sheet of parchment on your baking trays. Grab about 1 big tablespoon of your cookie dough (about a little bit bigger than a walnut are great sizes) and place them on the trays. I used my hands to grab the dough and just plopped it on the tray. No need to roll this dough into balls first. These cookies spread a lot. I found that 8 fit comfortably on my 17" baking tray.

For this step you'll need:
- Your Oven :-)
Bake for 11 - 13 minutes in your preheated oven 375˚F (190˚C).

For this step you'll need: Place your cookies on the cooling rack and let them cool for a few minutes. (Tinfoil on the counter top or a plate will work as well.) -

If you have any left over fresh orange juice, grab a small glass and indulge in a chewy cookie bursting with orangey goodness. Be careful, these cookies are not heavy at all and it's very easy to put back 5 or 10 cookies in no time. :-) Hope you like it!
