Description

Using the power of sugar stamping, these oatmeal cookies have a delicious candy coating shell that goes well with its inner chewy texture. Recipe makes about 34 cookies.

  1. Preheat your oven to 350˚F (175˚C).

  2. In your main mixing bowl, add both sugars, shortening and mix until smooth. 

  3. Add egg and vanilla extract and continuing mixing.

  4. Sift in flour, baking soda, salt and mix. 

  5. Add quick oats, raisins and chopped up walnuts and mix. 

  6. Line a baking tray with parchment paper. Scoop 2 tablespoons of cookie dough (about the size of a walnut) and place the dough balls 2 inches apart on the prepared tray.

  7. Coat the bottom of glass in butter and then dip it into a small bowl filled with white sugar. Gently stamp each cookie with the glass. Dip cup into sugar bowl between each stamp so every cookie is evenly coated with sugar.

  8. Bake for 11 - 13 minutes.

  9. Let cookies cool before enjoying. :-)
