What We'll Do

  1. Step 1

    For this step you'll need:

    First, preheat your oven to 350˚F (175˚C). Then, let's prepare the dry ingredients. In a bowl, add your flour, baking soda, salt and baking powder together and mix. Set this aside for now.

  2. Step 2

    For this step you'll need:

    • 1 cup (115g) Your Favorite Chopped Nuts

    For this recipe, I used walnuts but you can use whatever nut you like the best. Finely chop your favorite nuts and set aside for later.

  3. Step 3

    For this step you'll need:

    Cream together butter and both your sugars until smooth. Normally, I mark the Mixer as optional, but for this recipe, you will need a standing or a handheld mixer for Step 5.

  4. Step 4

    For this step you'll need:

    Add your egg and vanilla to the mix. At this time, make sure to have a wire whip tool (whisk-like shape) on your mixer for the next step.

  5. Step 5

    For this step you'll need:

    I switched out my normal beater to a wire whip tool (whisk-like shape). This is because you will want to mix your ingredients until light and fluffy. This took about 5 minutes with my standing mixer.

  6. Step 6

    For this step you'll need:

    • Premixed Dry Ingredients From Step 1

    When your mix is light and fluffy, switch your blade back to a normal beater. Then, add your 4 premixed dry ingredients (flour, baking soda, salt, baking powder) into the mix 1/2 cup at a time and mix in between. If you add all the dry mix all at once, you will get blasted with flour to the face! :-)

  7. Step 7

    For this step you'll need:

    Add your oats to your mix and lightly mix them in.

  8. Step 8

    For this step you'll need:

    The last 3 ingredients to add will be your butterscotch chips, chocolate chips and finely chopped nuts. Mix these in and we're ready to make our Cowboy Cookies!

  9. Step 9

    For this step you'll need:

    Lay a sheet of parchment on your baking trays. Grab about 2 big tablespoons of your Cowboy cookie dough (about a little bit bigger than a walnut are great sizes) and place them on the trays. These cookies don't spread that much. I found that 12 fit comfortably on my 17" baking tray.

  10. Step 10

    For this step you'll need:

    • Your Oven :-)

    Bake for 13 - 15 minutes in your preheated oven 350˚F (175˚C).

  11. The Best Part!

    For this step you'll need:

    If you have a cooling rack, place your cookies on the cooling rack and let them cool for a few minutes. (Tinfoil on the counter top or a plate will work as well.) After they are done cooling, put on a cowboy hat and indulge. :-) I hope you like them!
