Applesauce Raisin Cake
Description
A super duper moist applesauce spice cake topped with caramel frosting using Yammy's homemade Unsweetened Applesauce Recipe. When sliced, recipe serves about 12.

Preheat your oven to 350˚F (175˚C).

In your main mixing bowl, add oil and dark brown sugar and mix.

Add eggs and unsweetened applesauce and mix.

In a second bowl, add flour, baking powder, baking soda, cinnamon, cloves and mix.

Add the second bowl into your main mixing bowl and mix.

Add raisins and mix by hand.

Pour into 13x9 glass oven baking dish.

Bake for 40 mins.

Cool completely before making the frosting.

In a small sauce pan, add unsalted butter, dark brown sugar, milk and melt on medium low heat. Stir continually until mixture begins to boil. Once boiling, continue cooking for 2 mins. Remove from heat and cool for 10 mins.

In the same sauce pan, add powdered sugar and vanilla extract and mix until creamy and smooth.

Ice your applesauce raisin cake. This caramel buttercream frosting dries fast, so add optional chopped pecans immediately. Serve by the slice. Enjoy!
