What We'll Do

  1. Step 1

    For this step you'll need:

    Preheat your oven to 350˚F (175˚C). In a medium bowl, add your flour, baking soda and baking powder and mix them together. Set aside for now.

  2. Step 2

    For this step you'll need:

    In your main mixing bowl, add your 2 sugars and shortening together and mix. Having a mixer is optional for this recipe as this cookie dough can be mixed by hand with a spatula.

  3. Step 3

    For this step you'll need:

    Add your egg and vanilla extract and continuing mixing until smooth.

  4. Step 4

    For this step you'll need:

    • Premixed Dry Ingredients From Step 1

    Add your dry ingredient mix into the bowl. You can go ahead and add it all at once since there isn't that much flour needed for this recipe.

  5. Step 5

    For this step you'll need:

    In a medium bowl, add your quick oats, unsweetened Coconut Flakes and favorite nuts chopped up (walnuts for me). Mix them together and let's proceed to the next step.

  6. Step 6

    For this step you'll need:

    • Premixed Nutty Oat Mix From The Previous Step

    Add your nutty oat and mix into your cookie dough. If you're using a mixer, I would recommend mixing this in by hand with your spatula as this mix is heavy and can easily overheat a mixer's motor.

  7. Step 7

    For this step you'll need: Lay a sheet of parchment on your baking trays. Grab about 1 big tablespoon of your cookie dough (about a little bit bigger than a walnut are great sizes) and place them on the tray. These cookies spread just a little so I found that 12 fit comfortably on my 17" baking tray. This mix is a little on the dry side so the last few cookies might be a little crumblier than the first cookies.
  8. Step 8

    For this step you'll need:

    • Your Oven :-)

    Bake for 10-12 minutes in your preheated oven 350˚F (175˚C) preheated oven. 

  9. The Best Part!

    For this step you'll need:

    If you have a cooling rack, place your cookies on the cooling rack and let them cool for a few minutes. Tinfoil on the counter top or a plate will work as well. These cookies remind me of yummy granola bars but in cookie format! I wonder if we could add chocolate chips or raisins to them...? Hope you enjoy it!
